These crispy oven baked fries are the perfect accompaniment to any meal. They take a little time to prepare but they are totally worth it. These fries are a little healthier than your typical deep fried french fry. This is because they use a lot less oil to prepare. They’re crispy on the outside and soft and tender on the inside.
The method of soaking the potatoes in cold water beforehand removes some of the starch from the potatoes which yields a crispier fry. What’s not to love about crispy fries? After the potatoes are done soaking, it’s important to pat them completely dry. We don’t need any extra moisture on the fries before the go in the oven. Before baking, it’s important not to overcrowd the pan so that the fries will get crispy. Use two baking sheets if necessary.
While the potatoes are baking, it's important to prepare the garlic aioli. It's super simple to make. You just mix the mayo, garlic, and lemon juice together. It's important to use fresh lemon juice because it really highlights the flavor of the garlic. Place the aioli in the fridge while the potatoes are cooking.

Oven Baked Fries with Garlic Aioli
Crispy oven baked fries with garlic aoili. These are just as good as deep fried french fries.
3 large russet potatoes
3 tbsp olive oil
1 tsp paprika
Salt and pepper to taste
1/2 cup mayo
2 garlic cloves, minced
1 tsp fresh lemon juice
Preheat your oven to 450 F. Wash the potatoes and then cut them into matchsticks. Add them to a large bowl of ice cold water and let them soak for at least 30 minutes. Remove them from the bowl and then pat them completely dry.
Add the potatoes back into the (dried and cleaned) bowl. Coat them with the olive oil. Then add the seasonings and toss to coat. Place them on a baking sheet with parchment paper. Make sure not to overcrowd the pan. Use two baking sheets if necessary. Bake for 20 minutes. Then flip the potatoes and bake for 15-20 minutes depending on the thickness of the potatoes. If you use two baking sheets, make sure to space your racks far enough apart so that the fries have enough space to cook.
While the fries are done cooking, mix the ingredients for the garlic aioli. Then place the aioli in the fridge until the fries are ready.
